Garlic Ginger Chicken Stir Fry
Conner and I met in college; he went to Piedmont College and I was at Georgia College. He eventually transferred to Georgia Southern. I applied and was accepted into the school counseling masters program there after I graduated. At Georgia Southern, Conner and I were both extremely busy. I was generally in class until 7 or 8 at night and Conner, on top of his school work, was a member of a fraternity. The meals we prepared had to be quick and easy. One healthy meal we could always throw together quickly was a stir fry. We would use whatever vegetables happened to be in the fridge, chicken, and usually some teriyaki sauce we picked up at Walmart. Now that we have a little more time, we have been able to experiment with spices and making our own sauce. We hope you enjoy this recipe as much as we did!
Ingredients:
Chicken Marinade:
3 cubed chicken breasts
1/2 inch mined fresh ginger
3 cloves fresh garlic
1 cup teriyaki marinade
Stir Fry:
1/4 cup soy sauce
Any vegetables you want- we used zucchini, onion, carrots, red and orange bell pepper
Directions:
1. Marinade chicken for 2 hours
2. Cut/dice/chop vegetables and place in a wok or pan
3. Add seasoning and soy sauce
4. Cover and stir frequently
5. In a separate pan, cook chicken in the marinade
LOVE using fresh ginger, that is very much the Indonesian style of cooking except they use a Ketjap manis (sweet soy sauce!) which is healthier for those that follow a low sodium diet...
