Guacamole Breakfast Toast

It's only fitting my first post should be a breakfast post!  It's the first meal of the day and the first meal Conner ever cooked for me.  He has definitely stepped his game up since that fried egg sandwich.  A staple in the Schmit household, as of late, it has been the Guacamole Breakfast Toast.  As a reformed picky eater, I didn't even like guacamole until Conner began playing around with some recipes we found on pinterest.  Since then, we have used this guacamole recipe in many different ways including burgers, tacos, a sandwich spread, in wraps, and of course as a dip.  Here is the recipe for our guacamole.

Ingredients:
3 ripe avocados, peeled and pitted
1 TBS lime juice
1/2 TSP salt
1/2 cup green onion finely chopped
2 roma tomatoes, finely diced
1.5 TSP minced fresh garlic
1/8 TSP  cayenne pepper
3 dashes of mango habanero hot sauce (Powerful Pepper Company*)

Directions:
1. Mash together avocado with lime juice and salt
2. Stir in remaining ingredients

*Our favorite hot sauce to use is the mango habanero hot sauce from Powerful Pepper Company.  This is a local hot sauce company created by my cousin, Jay Gleaton.  We like this particular hot sauce with the guac because the fruit in it compliments the avocado.  It is also spicy enough to give mild avocados a great kick!  However, you are welcome to use your favorite brand!  Comment below and let us know what hot sauce you used.




Once the Guacamole is made, toast your favorite type of bread then pile on the guac with your fried egg on top.  Conner likes his over easy but I prefer mine medium-hard.


When frying eggs, Conner recommends you get the pan really hot with a thin layer of your preferred oil (we use canola or vegetable).  Crack your egg on a flat surface to avoid shells.

And voilà! You have a healthy and hearty breakfast to start your day out right.  There are plenty of variations to this meal.  If you would like to share yours, comment below!

  1. That looks yummy and both of us love avocado, we just scoop out a half one each at breakfast. That with the Spelt Harvest Bread that we order from Bernhard's German Bakery & Deli, 1592 Atlanta Road SE in Marietta! We love it, so happy we found them.
